5 eggs 2 tablespoons of pancake mix 2 tablespoons of heavy cream 1 packet of Sweet 'n Low 1/2 teaspoon of cinnamon 1/4 teaspoon of vanilla extract
Filling: 4 ounces of cream cheese 1/4 teaspoon of cinnamon 1 packet of Sweet 'n Low
Beat eggs with cream. Add pancake mix, sweetener, cinnamon, and vanilla, beat again. Don't worry about the lumps. For the filling, soften cream cheese in microwave. Add cinnamon and sweetener and mix well. Pour 1/4 of egg mixture into a buttered non-stick skillet on medium-high heat. Tip skillet so egg mixture covers bottom. Cook until solid and slightly browned, flip (carefully), and cook until slightly browned. Remove to plate and repeat, making 4 thin omelets. Spread 1/4 of cream cheese mixture over each omelet and roll up. Serves 2
