| Ruth's Escalloped Bacon & Eggs
1/4 cup of chopped onion 2 tablespoons of butter 2 tablespoons of flour 1 1/2 cup of milk 1 cup of shredded sharp Cheddar cheese 10 - 12 slices of bacon, crisp cooked and crumbled 6 hard boiled eggs, sliced 1 1/2 cup of crushed potato chips |

Make cheese sauce by melting butter in a saucepan. Stir in flour and add milk gradually. when white sauce thickens, add onion and shredded cheese. Stir until cheese melts and is well blended. In baking dish, alternate layers of eggs, cheese sauce, bacon and potato chips. Repeat. Bake at 350ºF. about 20 minutes or until it is thoroughly heated and bubbly.
