| Mock Potato Pancakes
12 ounces of frozen cauliflower 1 scallion, finely minced 1 large egg, well beaten 1 tablespoon of butter 2 tablespoons of sour cream salt and pepper, to taste
Defrost and partially cook cauliflower in microwave until tender (about 2 or 3 minutes). Drain. Separate the cauliflower into 2 batches: chop one batch. Mash the other batch so that it forms a paste. Mix into well beaten egg, the cauliflower batches, green onions, salt, and pepper. Mix well. In a skillet, melt he butter on medium/high heat. Ladle a small amount of the mixture into the hot skillet. With a spatula, form a circle. The pancake should be small enough for your spatula to fit under completely. If your skillet is large enough, do two or more at a time. Cook until brown on the bottom, flip over very carefully and brown the other side. Remove. Repeat until all are cooked. Serve with a small dab of sour cream on each pancake. Serves 4. |
