| Huevos Rancheros
6 eggs 3 tablespoons of butter 2 tablespoons of onion, finely chopped 1 clove of garlic, minced 2 tablespoons of green bell pepper, finely chopped 2 tablespoons of mild salsa 2 ounces of Monterey Jack cheese, shredded
Melt butter in large frying pan. Sauté onions, garlic, and pepper until soft. Beat eggs until light and pour into frying pan. Cook over very low heat, stirring constantly. When eggs begin to harden, add salsa, continuing to cook and stir until eggs are set. Add cheese, stir. Serve immediately. Serves 4. |
