Louisiana Grits
1 1/2 cups of grits 6 cups of water 1 stick of butter 3 teaspoons of seasoned salt 1/2 pound of Velveeta cheese 1/2 pound of sharp cheese 3 eggs, beaten 1/2 cup of slightly browned onions 2 tablespoons of pimentos, chopped, optional
Cook grits in 6 cups of water, as directed on package. Do not add salt to water at this time. Add all ingredients, cutting up butter into small pieces. Blend together and place in a buttered baking dish. Bake at 350ºF. for 1 hour, uncovered. If not ready to serve, cover and let stand. Yields: 10 servings
